Creamy egg & bacon on muffins-serves 2 ...adjust accordingly. Break 4 medium eggs into bowl,add 25g (1oz) of soft cream cheese &
lightly beat with a fork ,Melt a knob of butter into a saucepan , add the eggs & cook them over a
gentle heat until set , stir it to scramble .
Meanwhile .... place 2 slices of bacon under a medium grill, cook until crispy or cook until they are right for you .... split 2 muffins in half , toast until lightly golden , slice 2 tomatoes place on top of muffins , return to grill & heat for 1 minute , serve muffins with bacon on top then your scrambled egg . if you do not like tomatoes just leave this bit out ,,,or use mushrooms ???
please note ...scrambled eggs continue to cook once removed fromt he heat so please take care not to overcook ! Serve & enjoy !

PLEASE NOTE ...for a skinnier breakfast ...use semi skimmed milk or replace half the milk value with water to reduce even more calories .
